Confession Wednesday [7] link party!

Confession #1I ate 3 cupcakes on Monday night. Yep THREE. L I still feel gross and it’s Wednesday! Thanks a lot Sam for brining those over =|. Not to mention I am baking for the rest of the week for the party. Dear willpower, please kick in now. Thanks, the management.

Confession #2 I totally have been slacking on my workouts *BIG SAD FACE*. I need some motivation. Better yet, I need a better alarm clock in the AM. I have been sleeping in super bad lately. And considering my 1st confession, this is going nowhere good. womp womp.

Confession Wednesday [6] Link Party!

Confession #1: I have a crazy fear of getting lock jaw. 
Is there a name for that? Sometimes my jaw will pop a little when I eat and I kind of freak out (only to myself of course lol) that my jaw will lock. wth? I've only talked to one other person that has admitted to this fear as well. Is there anyone else that wants to come out of the closet? Please? The hubbs needs to see I'm not the only crazy lmao. 

Confession #2: In the back of my mind I'm wondering if this is actually a good link up. 
I mean seriously, one of these weeks I'm going to run out of confessions and it will get deep and personal. I don't know if I'm down with that lol. Maybe I'll make it a monthly link up? 

Confession #3: I secretly wish all of my blogger friends lived on the same block. 
We could have blogger parties and hang out all day long. I'm serious! How fun does this get together look at Crowley Party?! So rad.

Confession Wednesday [5] Link party!

Today's confessions are short and sweet. I hope everyone is having a good week so far! 

Confession #1: I forgot today is my confession Wednesday link party! hahaha seriously. I woke up late, convinced Vayda we needed to get ready fast like super heros (I hope these tricks last forever), couldn't find her shoes so we called Papa. Found the shoes, ran out of the door, ran back in the door (forgot my phone of course) and we were off! Once I finally got to work, which, hallelujah the boss man is lenient on the time I come in, sat down checked my emails and took a breath. Later after answering some work emails and pouring myself some much needed coffee I realized, OMG it's Wednesday! So glad to see you Wednesday ;]. 

Confession #2: Some of my friends already know this but it is what it is. I can not stand the phrase bomb.com Seriously, how cheesy is that? It sounds super 90's to me. If I hear it I won't comment, to each their own, but come on guys, can we pick a new phrase already?

Tuesday Treats {11}



I hope everyone has a special Valentines day today. Whether you're going out, staying in, spending time with family or even quality self-time...I hope it's a good one. And if you're one of those individuals who think it's a holiday created by Hallmark and don't participate...I hope you're able to dodge all of the red and pink today. Seriously, I can't imagine how annoying it all is lol.

Tuesday Treats {7}

Today's Tuesday Treat is coming a little late. I'm home with 2 sick girls :(. We have all been sick on and off since Christmas. This morning Vayda woke up with a smokers cough and a fever...so it's been a Vayda, Lori and Mama kind of a day. Besides the coughing all day it's nice to spend time with the girls. 

On a different note, today's treat is awesome! I am a follower of the lovely blog, Let it Grow, by Marybeth. And stumbled upon her stumble :). It's a blog swap! This will be my first blog swap and I'm so excited! Not only is it fun to network and get some snail mail, it's a Valentine swap. 




Confession time, I'm a huge Valentine lovey dovey nerd. I get on my own nerves sometimes. I always have been and just can't help it. My poor husband haha.

I saw this on pinterest and I was soooooo excited when I found out that Rita made these for Vayda for Christmas....Thank you Auntie Ritz, from both of us haha.

I have to say we have thee cutest refrigerator on the block! Not to mention, these actually keep Vayda busy for some time, she loves them!

Tuesday Treats {5}

Hello hello and Happy New Year!!

I hope you all had a wonderful NYE. The hubbs and I spent it inside this year with the girls. We watched a few movies had some cold stone (mmm) and quite frankly it felt like any other night haha. But it was nice to be in and Vayda sure did love yelling happy new year from the balcony haha. 

Do you ever get a late night sweet tooth? Last night I wanted something sweet SO bad. Which leads me to my Tuesday Treat. Have you ever made chocolate cake in a mug?! You must if you haven't, if you have and have different versions, please share! The recipe I followed is from 2 Stews, picture from 2 stews as well. Enjoy!!!

1-2-3 Chocolate Microwave Mug Cake
3 tablespoons unsweetened cocoa
2-3 tablespoons sugar (according to desired sweetness)
1 tablespoon flour
3 tablespoons milk
3 tablespoons vegetable oil, such as canola
3 tablespoons egg white or plain Egg Whites in a carton
1/4 teaspoon vanilla
optional:
1 teaspoon chocolate chips
*As a variation, substitute almond extract for the vanilla.
Also, you can change the chocolate chips to any flavor chips you'd like.
In a 1-1 1/2 cup microwave safe mug, blend cocoa, sugar, and flour together. Add milk, oil, egg
white and vanilla. Stir vigorously for 2 minutes, (or until you've sung Happy Birthday 6 times!)
making sure to get all ingredients incorporated. Sprinkle chocolate chips on top, if desired. Bake
in microwave for 2 minutes. Check to make sure it is cooked on the bottom by lifting it a little with
a spoon. If it is runny, cook 10 seconds more at a time until done. Do not overcook, as it will be
rubbery. It puffs up and may overflow, but that is OK, it deflates somewhat as it cools. You want
the texture to be moist and slightly undercooked. Let cool until just warm and serve with whipped
cream squirted fresh from the can.
Serves one.

Tuesday Treats {4}

Well I hope everyone had a very Merry Christmas!!! We had a great one! We spent Christmas Eve at my parents in LA. We mad tamales and watched the (awful) Charger game. Then we ate a great meal together, opened presents, read the birth of 6lb 8oz baby Jesus (lol) and sang a few carols. We drove back that evening and I wrapped the night away...with a nice little glass 'o wine.

Vayda woke up at about 7am and discovered Santa brought her a big girl bike!! We had so much fun unwrapping our presents and stockings. And did I mention my husband is thee greatest?! He got me a Canon Rebel!! Did you hear? A CANON REBEL!!! Ahhhh I am SO excited to learn this little bad boy!

So after snapping a few candid shots (photos coming soon), I got to making coffee and getting the kitchen ready for a morning of cooking breakfast with my awesome Mother-in-law. We made her famous Christmas breakfast...and quite frankly, it's the only thing the hubbs truly looks forward to Christmas day (so I better get it down pat haha). It's kind of a breakfast casserole. Cooked potatoes with a few onions for taste, bacon pieces and lots of Monterrey Jack cheese. After each item is cooked in a skillet to get crispy (except the cheese) you throw it all in a casserole dish, add the cheese and bake for about 10-15mins. While that was going we made eggs to order and chopped up tamales and fried them....OH-SO-GOOD! Pair that with some fresh oj and you're set!

Ready for the Tuesday Treat?! Jalapeno poppers! These little guys were a hit and so easy!! Found on pinterest (duhh lol) I had to try these out.



All you need is a tube of cressent rolls, a block of cream cheese and jalapenos. On the recipe that I found she added a Tbl spoon of sugar but I liked them better w/o the sugar. To each their own though.

Toss the cream cheese in a bowl and microwave it on high for about 30 secs. Just to get it soft. Dice as many jalapenos as you like. We like things spicy in the Arreguin household lol so I did about 1 cup of diced jalapenos. Throw those little suckers in the cream cheese and mix it all together.

Open the cresent roll can and pinch together two triangles. In the end you should have 4 rectangle and no perforated edges. With the back of your spoon, spread the cream cheese mix onto the center of your rectangles. roll these bad boys up with the long side. You should have 4 long logs now. Cut each log in half (use a super sharp knife), then that log in half etc. You should have 32 small "stumps" or rolls. I used parchment paper or you can place them straight on the baking sheet, but make sure you use cooking spray, they will stick.

Place them with the cream cheese side facing up and bake in a 375 degree oven for about 10 mins. These will go fast!

Tuesday Treats {3}







Today’s treat was inspired by the fabulous blog, Bake at 350. I love her blog and everything in it!! Which isn’t the greatest when you’re trying to lose weight and get caught up browsing a baking blog haha but it’s the holidays…right? Anyway, here is a picture of my first attempt using the “flood” technique to frost cookies.



...because last time he ate the ones for the party first haha.
 Not too shabby for my first batch, huh? I feel like I could have done more design/more cookies, but with only two squeeze bottles for the frosting, one pastry bag (hmmm Christmas gift idea?), two fussy baby girls and not enough coffee made for this tired momma…this is what I got haha. They sure tasted yummy, if I do say so myself!

All for a GREAT cause, we took them later in the week to the fireman down the street. And not just any firemen, the shift that delivered Lori :). Ok, I also took them a popcorn tin (that did not seem like it was enough to make their bellies full). Only one of the three firemen that played a huge roll in the delivery was there the night that we took the cookies, but a special one indeed. We truly enjoyed chating with all of them and remenising about that crazy miraculous day.

Tuesday Treats

I've always complained to Vic that Tuesdays tend to be a little dull. Monday is well Monday, back to work and beginning of the week, Wednesday is humpday, Thursday is Friday eve and Friday is well...do I need to explain? So let's make Tuesday a little less dull and try something new:
